I am a Kroger Family of Stores grocery shopper having grown up with the local Fry’s as our family’s store of choice. Currently where I live there are three Fry’s close to me, but I oftentimes find myself driving past the Fry’s and to the Sprouts down the street for the organic or healthy foods on my list. I’ve seen organic offerings at Fry’s, but always thought it was more expensive or that they didn’t have a good enough healthy food selection.

Earlier this month, I was informed by my friends at Kroger that you can actually go online to SimpleTruth.com/Coupons and browse through $100 worth of digital coupons. I’m clearly new because I had no idea that digital coupons are a thing! You can browse the list of coupons and add them to your Fry’s Shopper Reward account/phone number. From there you can print out your grocery list based on what coupons you selected (which is what I did) or if your Fry’s has curbside or delivery options you can do that too. On the receipt it shows “Ecpn” and the discount you received.

Breakfast is the most important meal of the day and for me it’s the meal that is always rushed. I cherish every extra second of sleep to the point that I am often times running out of my house to make it to work on time, so I end up grabbing whatever is in my fridge and eating it during my morning drive. When I’m trying to eat healthy, I need to start with a healthy breakfast otherwise the rest of the day is ruined. If I start with a bagel sandwich or an almond croissant, I will either feel too full that it ruins my lunch or I’m starving having barely started my work day. 

My breakfast solution is tasty, nutritious, easy-to-make, and filling protein pancakes. Thanks to Extreme Transformation I discovered Green Machine Pancakes! Plus, it’s super easy to make the morning of or they taste good heated up if you prefer to meal prep. The best part is my super picky husband loves them! Trust me, when I find a food that both Aaron and I can agree on it feels similar to that feeling you get when you find that pair of boots you’ve been looking everywhere for and they happen to be on sale and in your size!

I make the recipe exact to the women version, which has 22 grams of protein! For me, it makes four pancakes the size of my hand. Sometimes I’ll make six to eight smaller pancakes, but the bigger ones look better for photos and in my option taste the same. 

The difference from regular pancakes is that these don’t rise or fluff up. I’ve found that the outside will burn fairly easily, but I like it to be a medium brown color otherwise the inside is a little too soft. However, the inside doesn’t exactly firm up completely. It usually is a softer consistency, but definitely not raw like an undercooked pancake would be.
